Have you ever found that you stop exploring culinary options in your city? You find your favorite spots with mouthwatering dishes and forget to be adventurous. Since I am tip-toeing around that rut, I frequently remind myself to try new restaurants.
We recently dined at the Trattoria Stella on Colfax and I was pleasantly happy with my dinner. Mark my words, you put any form of beets on a menu and I am in. The beet thing I have grown into. I definitely remember hiding my beets in a full glass of milk at the babysitter to get my coveted rainbow ice cream. Yes, that makes no sense at all. Pink milk? Come on 6 year old Katey… I got my ice cream though. Win.
Back to Trattoria Stella, I had the Ravioli & Beets with goat cheese & ricotta ravioli, marsala cream sauce, beets, pine nuts, topped with baby greens. My plate was clean and it’s a fact I did the head-nod-of-approval-this-is-amazing while eating.

stumbled upon this and can’t wait to try it out. i’m always looking for new places to try in denver. their brunch looks amazing and really decently priced. have you been or heard of anyone who has? how about the wait – was the place bustling or comfortable?
