Keeping things interesting in my kitchen, I adapted this recipe for Portobello, Broccoli and Red-Pepper Melts with ingredients I had on hand. I used regular mushrooms and goat cheese instead of gouda and the outcome was delicious! I’ll definitely keep this recipe on file for when I entertain guests as an appetizer. You know, since I do so much entertaining.
