My Sunday morning was relaxing as I snuggled on the couch, wrapped in a blanket and found new recipes to drool over. I like to make soup during the week, since it is an easy lunch to take to work, and this healthy Potato Corn Chowder was just the ticket. This chowder isn’t heavy and is full of potatoes, red peppers, onions, zucchini and corn.
