Have I ever mentioned how much I love mac n’ cheese? The recipe I cooked this week made me feel less guilty about carbing up, since there was spinach and no pasta. Healthy train! Woot! It’s a beautiful day in Colorado and I signed a lease today for a new apartment next month. I’ll be sad to leave my gem of an apartment, but excited for a bit of change.
