After Thanksgiving, my mom sent me home with different varieties of winter squash. I only knew one variety in the bag and had to research the rest. A Carnival Squash, that tastes similar to sweet potatoes and butternut squash, was in my bag and was calling out to be soup.
A squash soup? Oh Katey, you are going down the road to soup disaster! Yet, the recipe I found turned out more than delicious and my first bowl of soup was gone within 5 minutes. So, then I ate the soup for lunch the next day, and then for dinner the day after.
We won’t mention I burned half the shallots, which adorned the top of my soup quite nicely afterwards and had a great crunch. I am not perfect at cooking. Baking, maybe. Cooking, no.
