A baking success story! It’s about time. The recipe I used this weekend for vegan Rhubarb Cupcakes turned out fantastic. I was a bit confused on how to make stewed rhubarb, but after some internet research and a phone call to my mom I was on my way to wonderful little treat. I have rhubarb leftover and am excited to see what else I can make with it.
