What is a clafoutis? It all starts with fruit, I picked peaches but you can pick anything – lucky you! After that you pour pancake-like batter around the fruit and bake. Easy and beautiful. Oh, and it is pronounced cla-foo-tee. I had to look it up too. My french goes only as far as ballet terms.
The recipe I used suggested to bake the clafoutis in a cast iron skillet. Since I do not have one, I baked the clafoutis in a 8″ cake pan. After letting it cool, I realized in despair that the clafoutis would not budge from the pan. Next time I will use a spring-form pan so I can photograph the entire thing, not just a piece.
