Back in the kitchen this week and the theme is fall baking! It is also AMAZING that my apartment isn’t 110° F. Alright, alright… it never got close to being that hot, but now the are windows open and a cool breeze flows through which makes Bakey Katey do a little happy dance.
I chose a Carrot Muffin recipe to celebrate the first day of fall. The muffins aren’t like the usual heavy carrot cake, but light, airy and full of spice! Instead of using a coconut whip, I decided on a plain whip with coconut flakes sprinkled on top. An absolute must? Drizzle maple syrup over the muffin. It’s like your biting into a piece of fall heaven.
