I am seasonal eater. Is that weird to say? I said goodbye to salads early in September when I was chewing on a piece of spinach and could-not-handle-it. My salad peak was reached.
Knowing that I can’t stomach another large salad, I turned my attention soup. This week’s soup is a Roasted Cauliflower and Chickpea Soup. Full of chickpeas, cauliflower and potatoes the soup is nutty and hearty. Sprinkle the top with paprika and you get a nice spicy kick. Yum nom!
