Pumpkin. I can’t stop. Everything I have baked in the past week and a half includes pumpkin. Yet, it is not a bad thing since everything has been delicious!
Valencia Orange Pumpkin Muffins were on the agenda last night, and boy did they turn out muffin-ey. Much more muffin-like than the Pumpkin Chocolate Chip Muffins I made last week. I used spelt flour instead of whole wheat as the recipe called for, and there is barely any sugar and no butter in this muffin. I didn’t feel one ounce of guilt eating this muffin for breakfast.
