I won’t lie, I am over the quinoa. Words I never thought I would say. But I just did and now I have a funny feeling inside like I just denounced a minor-ly healthy thing in the midst of the health-crazed Denver crowd. Are they coming for me? I just don’t know. .
The Roasted Cauliflower and Mushroom Quinoa that I cooked earlier this week was full of yummy ingredients, mushrooms, walnuts, roasted cauliflower tossed in a balsamic vinaigrette and topped with goat cheese.
A good ending for the time being of my previous quinoa obsession!
