This Thai Barley Salad is SO GOOD. I usually don’t start my posts that enthused, but when I was done making this salad and went in for the first bite, it was like food heaven.
This salad is full of health – cabbage, carrots, edamame, peanuts, barley and mango are tossed in a soy sauce, rice vinegar, peanut butter and fresh ginger sauce. The mango was my favorite part, a little sweet burst between smooth peanut butter.
