I do love me some risotto and when I found a recipe that used quinoa instead of Arborio rice, I decided to give it a go! The Quinoa Mushroom and Thyme Risotto recipe was fairly easy to cook and tasted delicious. Instead of using 1.5 cups white quinoa, I used 1 cup red. I did this because most times dishes that use quinoa go overboard and taste too ‘quinoa-y’.
The only bad part about cooking this dish? I burned my pinkies when adding the mushrooms to the olive oil. Hot oil splatter is never good!
