I am all about the barley these days. Quick cooking barley that is. I don’t have an hour to waste on the regular stuff. This girl is busy!
A Chickpea Cherry Barley Salad was on my list this week to make for lunch and it didn’t disappoint. Full of chickpeas, barley, celery, green onions and topped with cherries and goat cheese, my tummy was rumbling as I made the salad. The best part was that it was very simple to make and made enough for 3 lunches!
