Nothing like a meal both me and my Mountain Man enjoyed! I picked a healthy stir fry, Chicken Peanut Soba Noodles, last week for a dinner and it was gobbled down. Success. Now. . . if I can just sneak more quinoa in our meals . . . will he notice?

Yum. Yum. Yum. This. Soup.

Kicking fall into gear with this Sweet Potato Sriracha Noodle Soup was the best idea ever. The veggie broth is the perfect mix of sriracha, garlic, ginger and lime juice. Add in the sweet potatoes, soba noodles and toppings and you have yourself a pho worthy rival. AND best part? It is ready in 30ish minutes and you don’t have to sit in a restaurant with bad elevator music and art. Just you and this awesome soup. Thank me next week when you give it a go.

I am happy to say we have a functional row home again. During the time we didn’t have natural gas, it opened my eyes at how we take for granted our running water, electricity, gas and hot water. Once everything was fixed late last week, the first thing I did was cook!

Needing a healthy, warm and filing meal, I cooked Sweet & Sour Tofu. I was surprised that the recipe called for tomato paste in the sauce, yet it tasted great! This meal was easy to make and full of flavor. If I cook it again, I will use two heads of broccoli since you can never go wrong with more vegetables!

This recipe goes out to my Mountain Man. His comments on my cooking habits are, “Ohh…. does it have quinoa, beets or chia seeds?” Since I tend to cook vegetarian for myself, I have been trying to pick recipes that both of us would like that include meat. This week’s meet-in-the-middle meal was Baked Honey Lime Chicken Taquitos.

The taquitos are healthy right? Just spicy chicken and a little bit of cheese wrapped in a tortilla, lightly sprayed with olive oil and then baked. I say that’s healthy. Maybe the most unhealthy part was the sour cream, cilantro and lime sauce that you dip the taquitos in. Yeah, that sounds about right. But it’s like the best part.

Hold me back from the brussels sprouts! These sneaky little vegetables keep finding themselves in my meals, and who am I to say no?

For a quick dinner I prepared easy Brussels Sprouts Pita Pizzas with Bacon. The bacon was optional, but that just says to me – mandatory bacon consumption. Fresh mozzarella, sweet onions and brussels sprouts tossed in a garlic olive oil make this ‘za delightful. Magnifico!
