The first full week at work after the holidays was a jammed packed one. Filled with a last minute work trip that included only 4 hours of sleep in 48 hours, 16 miles of walking, a mid-flight turnaround back to Las Vegas, and my first and last 4.5 hours on the Las Vegas strip, I have been recovering ever since. (zicam is my best buddy) On top of that, last weekend one of my great friends came to visit from Brooklyn, so I spent the week getting ready for her and planning all the great Denver places to show her. Needless to say, this girl is busy and tired.

Not to busy to eat though. Come on. Last week, I whipped up a healthy Peruvian Royal Quinoa Salad to make up for undeniably tastey and unhealthey traveling diet. Quinoa, carrots, peas, corn, red peppers, tomatoes and chopped queso fresco on top of a bed of romaine was the ticket to feeling great about my lunch. My coworker peered over my desk to say, oh yummy! And they were right.

Here are some facts for your Monday:

– Any blogger feels bad when they don’t post very often and that is definitely me these days. With about one post a week, you might be wondering what I am up to. Refer to next fact. 

– Stay tuned to Spring 2015 and you will find out! I’m excited, you’re curious and there is a lot going on behind the scenes.

– Over the snowy weekend I cooked this Roasted Chickpea, Carrot and Feta dish. It’s healthy, flavorful and feta is always a plus in my book. I used up my remaining farro, but mostly used barley for my base grain.

Hang in there until Christmas and some relaxation. We are only 10 days out!

Nothing like a meal both me and my Mountain Man enjoyed! I picked a healthy stir fry, Chicken Peanut Soba Noodles, last week for a dinner and it was gobbled down. Success. Now. . . if I can just sneak more quinoa in our meals . . . will he notice?

Yum. Yum. Yum. This. Soup.

Kicking fall into gear with this Sweet Potato Sriracha Noodle Soup was the best idea ever. The veggie broth is the perfect mix of sriracha, garlic, ginger and lime juice. Add in the sweet potatoes, soba noodles and toppings and you have yourself a pho worthy rival. AND best part? It is ready in 30ish minutes and you don’t have to sit in a restaurant with bad elevator music and art. Just you and this awesome soup. Thank me next week when you give it a go.
