I feel like this blog post is an awkward lunch between two people who haven’t seen each other in a while. But this girl is busy! I am teaching a toddler and 4-8 year old ballet class on the weekends that is eating up my Bakey Katey time. Add in a few other projects that are taking up my evenings and my gourmet cooking is turning into pp&j’s. Don’t judge.

I did manage to make one healthy recipe lately. Blue Apron has some deliciously unique recipes and I love trying out new dishes. I picked their Thai Curry Chicken Meatball recipe that included rice noodles, baby bok choy, lemongrass and chicken meatballs in a red coconut curry. Yum!

Blue Apron has mouth watering recipes that everyone should try!  They are a fee-based recipe subscription service that supplies their customers with recipes and the actual ingredients to their door step. I haven’t subscribed to their service, but have been trying out their recipes!

Last week I cooked Blue Apron’s Parmesan-Basil Chicken Patties with Braised Roman Beans and Barley for my Mountain Man and I. Although I couldn’t find Roman beans, organic green beans worked just fine. This dish was delicious and well received!

Trader Joe’s has a yummy ready-to-eat salad that I recreated at home last night. Their Five Spice Asian Noodle Salad is one of my favorites when I don’t feel like cooking. I created my recipe by reading the ingredients on the back, but still know I have some perfecting to do with the dressing. Regardless, it is a healthy meal that is also oh so cute in a bowl!

I spent this past weekend in Glenwood Springs at my family reunion. We celebrate a family member’s ‘birthday’ every year (even though their birthday isn’t on that exact weekend) and this year I made a Lemon Thyme Cake for the birthday festivities!

The down-side of baking a cake two days early for a birthday celebration is that you don’t get that first bite to know how delicious it is. Regardless, after two days this Lemon Thyme Cake tasted divine and got rave reviews from my family. Lucky them for once – the get to eat a Bakey Katey creation instead of drooling over the computer screen!

Brownie + crust = brownie pie. That’s what I am calling the Fudge Brownie Tarts I made over the weekend. Instead of using mini tart tins, I used small porcelain pie dishes for the recipe that worked out perfectly. The best part of this recipe was that my brownie batter cooked completely through and that happens rarely. Win!
