Who doesn’t love winter soups? This hearty Ribollita Soup was quite delicious. Full of vegetables and crispy pancetta, it was a crowd pleaser. Well, if a crowd is me and my Mountain Man, it was 5 stars all around! The one downside is that I used dried beans which took forever to prepare and cook. If you are looking for a quick soup, I would substitute for rinsed canned beans. After gorging yourself during Thanksgiving, this soup will make you feel healthy and full!

When the weather drops to freezing, soup is always on the horizon. This week’s tummy warming meal was a White Bean and Chorizo Soup. Hearty and full of vegetables, I dodged the big pieces of chorizo while my mountain man dodged the veggies. Typical for us. Regardless, we both enjoyed the soup and it was a perfect meal for fall!

Winter time is soup time and this White Bean, Kale and Lemon Soup hit the spot for a warming meal. I love creamy soups, but have wanted to perfect my broth based soups. This soup has garlic, red onion, vegetable broth, potatoes, pasta, white beans and kale with just a hint of lemon. Perfection!

Last week I made a Roasted Red Pepper and White Bean dip for a NYE gathering at my friend’s house. The dip was so good that I had to make it again this week. Oh, and the best part? I used my new food processor from Christmas and it worked a MILLION times better than a blender. Big girl stuff. It’s funny how your love for things change over the years. When I was little it was friendship bracelets and dolls, now kitchen accessories. Real cool Katey.
