This recipe goes out to my Mountain Man. His comments on my cooking habits are, “Ohh…. does it have quinoa, beets or chia seeds?” Since I tend to cook vegetarian for myself, I have been trying to pick recipes that both of us would like that include meat. This week’s meet-in-the-middle meal was Baked Honey Lime Chicken Taquitos.
The taquitos are healthy right? Just spicy chicken and a little bit of cheese wrapped in a tortilla, lightly sprayed with olive oil and then baked. I say that’s healthy. Maybe the most unhealthy part was the sour cream, cilantro and lime sauce that you dip the taquitos in. Yeah, that sounds about right. But it’s like the best part.
